    Blend: 45% Chardonnay, 55% Pinot Noir


    Tasting Notes: A refined blend of green apple and lemon curd, with a rich, creamy texture from 36 months on lees. Fine bubbles and crisp acidity create an elegant finish, with subtle hints of toasted brioche.


    2021 Growing Season in Tumbarumba:Cool, stable weather ensured slow and even ripening. Hand-harvesting involved meticulous selection, changing blocks 4-5 times and switching ends of rows to achieve perfect ripeness and acidity.


    Food Pairings:Ideal with oysters, scallops, and creamy cheeses like brie or camembert.
